Eggplant

We have two varieties: Irene, a deep purple, classic looking fruit and Rossa Bianca, which is an Italian variety with white and purple swirling and a creamy flesh. Both are great simply sauteed in olive oil with a sprinkle of salt or used in ratatouille.
