Massaged Kale Salad (from www.InSonnetsKitchen.com)

 

This is a recipe for a salad base. Use any salad toppings to make it how you like. We have really enjoyed it with roasted cauliflower, pecans, celery and dried cranberries.

 

 

1 large bunch curly kale, de-stemmed and torn or chopped into pieces

¼ teaspoon fine sea salt

1 tablespoon fresh lemon juice

1 tablespoon olive oil

Any desired toppings

 

 

1  Add the kale to a medium mixing bowl along with the salt and lemon juice.

2  "Massage" kale for five minutes, or until leaves are sweet and tender.

3  Add the olive oil and give one more quick "massage.

4  Add your toppings, toss, and enjoy!
