Sweet and mild with subtle notes of honey, melon, or green banana. Smooth, clear yellow skin, sometimes with a faint pinkish-orange blush. Excellent for fresh eating, slicing into salads, and snacking. It also holds its shape well when used in baking, pies, or sauces. The bright white flesh is notably slow to brown when sliced.
South Baldwin Farms does not follow organic practices, but they reduce pesticide usage via a variety of integrated pest management techniques. In addition, some of the pesticides they use are organic (OMRI certified), and they use drip irrigation to reduce water usage.
