Spinach Salad with Berries and Poppy Seed Dressing


Several handfuls Spinach, rinsed and torn
2 c. strawberries (sliced), raspberries, or blueberries
¼ c. feta cheese (optional)
handful nuts, chopped (optional)

Dressing:
½ c. olive oil
½ c. vinegar
¼ c. sugar
1 t. poppy seed
½ t. salt
½ t. dry mustard
1 bunch of green onions, finely chopped

1 In a large bowl, toss together the spinach and berries.
2 In a medium bowl, whisk together the olive oil, vinegar, sugar, poppy seeds, salt, dry mustard and green onion.
3 Pour desired amount of dressing over the spinach and berries, and toss to coat.
4 Top with feta and nuts at this point. Refrigerate remaining dressing.
